The 4th of June saw the Brisbane chapter of the Beef and Burgundy Club travel to Plum Tucker. Again, the food and wine was $50 per person.
Plum Tucker is a charming café operating out of a 1920s terrace house in Red Hill. The café is a popular breakfast and lunch venue for the local area, and also offers dinner 4 nights a week. The club was given a private room upstairs to enjoy the meal.
This month we were lucky enough to have the owner, Matt, join us for dinner. Matt and …the team at Plum Tucker worked tirelessly behind the scenes to create the perfect meal. They designed and trialled multiple dishes and tasted several wines before they landed on the ideal combination.
The dish consisted of pickled wagyu tri tip with artichoke custard, coal roasted potato and smoked greens. The tri tip of beef was pickled in a brine consisting juniper berries, star anise, peppercorns, bay leaves, mustard seeds, sugar and salt. The beef was in this brine for three days after which it was grilled over coals before resting and plating. This was coupled with an Argentinian Malbec which complimented the flavours of the dish perfectly.
Needless to say, this custom-made dish was faultless. After dinner, the wine continued to flow and a great night was had by all.
